I like to add egg noodles :) Also I try to strain off some of the fat when I remove the chicken. Sometimes if I know I'll be in a rush the next night and will get home late, I make the broth the night before (after dinner), then take out the chicken and veggies, and stick the pot in the refrigerator. Throw the chicken (or a few carcasses), 1/4 cup apple cider vinegar (leeches all the goodies out of the bones), an onion w/ the root cut off and quartered (leave on the skin, it tints the broth), a carrot or two, a rib of celery w/ leaves, whatever herbs you love (bay leaves, thyme, rosemary). 24 hours on low will net you a rich, lovely stock. Cool & skim, pick the chicken, add fresh diced mire poix, and make your own dumplings. (2 cups flour, 2 tbsp poultry seasoning, ice water - mix together until it's a stiff dough. roll out to 1/4 in thickness, cut, add to boiling stock & cook until done). I cut up my chicken - bac...My version is cheaper...<br />I cut up my chicken - back, wings, breasts cut in half (if they are big), drum sticks, & thighs (9-11 pieces...) brown in your pot (I use an enamelled cat iron pot) in batches, remove. Brown a chopped onion, add a bit of water so you can scrape up the fond. Add the chicken (& the juices) back to the pot, add enough water just to cover. Cook for 2-2.5 hours, remove chicken, debone, return chicken, add a chopped carrot, fresh parsley & black pepper. (I use a Kosher chicken, so I don't add salt.)Anonymousnoreply@blogger.com
