Agreeing with some of the comments on the "can of Bud" post. I will not buy Bud, Miller, Coors, or any of their ilk.

Why? Because they are the Velveeta of the beer world. They are manufactured with the cheapest ingredients to meet a price point, then advertised with billion dollar budgets.

Apply the same logic to beer as you do to food, and you will understand why I buy local and craft beer instead of mass swill.

The added bonus of using craft beer instead of cheap swill? Craft beer TASTES GOOD so you don't mind buying a 6 pack!

Stuart, you make a seres of great points--and I have to say I agree with you. My initial issue was sticking to my rule of making recipes "by the book" first.

My current favorite rice side dish is Pioneer Woman's Basic Mexican Rice. Since I cook for one, I cut the recipe in half and use only the Rotel tomatoes: http://thepioneerwoman.com/cooking/print-recipe/31262/#sizeFP

I sometimes add meat to the leftovers and make it a main dish, or I reheat the rice and top it with a fried egg.
